Mammoth is interested in making spirits that highlight the character of the grain we choose. Up to now, we, along with most other distilleries in the world, have used #2 Yellow Dent corn. It is by far the most dominate variety of corn on earth, largely because of its high yield. But we’ve come to believe that the focus on yield has come at the price of character. For that reason, we’ve spent the last year testing other varietals and based on the results have decided to make the switch to an heirloom corn called Wapsi Valley. We can taste the difference and we think you will too. Mammoth Vodka made from Wapsi will hit our shelves in the spring; in the meantime, we have samples for you to try in all the tasting rooms.
