What's In This Bottle?

Northern Bourbon is a blend of traditional American bourbon and our own base-distilled Woolly bourbon, made from Wapsie Valley corn, Wheeler rye and Odyssey barley. Finished on toasted Michigan cherry wood and aged in a northern climate, it delivers layered character, balanced structure and a dry, satisfying finish.

TASTING NOTES

Cinnamon, molasses and stone fruit define the nose, leading into a rich palate of caramel corn and beeswax; finishes dry and clean with vanilla, soft tannin and a cola-like snap.

Tradition Reframed by Climate, Grain and Technique

Northern Bourbon carries forward the vision first introduced by our Northern Rye series: to explore what whiskey becomes when traditional American styles meet northern grain, northern climate and a distinctly hands-on approach. It’s a foundation of classic Ohio Valley straight bourbon—structured, warm, and deeply familiar—yet shaped by our own base-distilled Woolly bourbon and a finish on toasted Michigan cherry wood. The result is layered and balanced, with character defined as much by place as by process.

This is not a reinvention of bourbon—it’s a reframing. The familiar warmth is still there, but now grounded in a different context: influences of Wapsie Valley corn, Wheeler rye and Odyssey barley, aged in our cooler northern rickhouse and shaped by local materials. Every element reflects Mammoth’s approach to whiskey-making: thoughtful blends, patient decisions and the belief that great spirits are born not just from recipe and rote process, but from intention, attention and the very land whereupon they are crafted.
