What are Borrowed Time Spirits?

In addition to our complete line of base-distilled spirits bottled in the hand hewn product line, we actively search the world for the best spirits that we can’t make ourselves, either because they’re aged longer than we’ve been in business, or they’re product categories that can’t be made in the United States. Our Borrowed Time category is a fun and rewarding way for us to collaborate with other great spirit makers.

PRODUCT NOTES

STYLE: Ohio River Valley Bourbon
ABV: 43% (86 proof)
SIZE: 750ml
GRAIN: 75% corn, 21% rye, 4% malted barley

TASTING NOTES

Strong oak aromas with vanilla and cornbread accents through the palate. Viscosity is rich and velvety with a long, lingering finish punctuated by notes of leather and cigar.

Combining Wood Notes from Different Barrels into a Single Flavor Chorus

Of all the major spirits in the world, only two require the use of charred, new oak barrels: bourbon and rye. Since the rye grain provides far more flavor than corn (but also lower yields of alcohol) it makes sense for major companies to throw their might behind bourbon. And while the industrial whiskey producers distill huge amounts of spirit, it is the barrel that transforms this raw, harsh white distillate into a world-class spirit. The metamorphosis into bourbon is made possible by the cooperage skills of many people. From selecting trees to fell, to operating the mill to make staves, to seasoning the staves to the hard work assembling the cask.

And most importantly, the charring process that caramelizes wood sugars to make flavors and colors accessible to the spirit. During its time in the barrel, the spirit moves in and out of the charred and toasted layers of wood, slowly absorbing the compounds that contribute flavors of vanilla, baked bread, smoke and more. In the Ohio River Valley bourbon tradition, barrels are left almost entirely alone—with minimal cask management (as would be common in other spirit producing regions). After years in the barrel, some of the volume is lost to evaporation, thus reducing and concentrating much of the wood-derived character.

• fill rocks glass with ice
• add 2 oz Borrowed Time Straight Bourbon
• add 1 oz Cherry Bounce
• add 2-3 dashes Angostura bitters
• stir until cold (strain if desired)

Garnish with a cherry.
