Picking the Perfect Yeast for Our First Barrel Distillation
As we move closer to our first distillation of Rosen Rye, we’re conducting an important trial designed to determine which strain of yeast will best complement the Rosen grain as it turns into whiskey. For making our current line of whiskies we use a previously vetted yeast strain that we like for a variety of technical reasons. But for this unique and special grain we don’t want to make assumptions.
The trial involves creating a 15-gallon mash of Rosen that will go into 4 separate fermentations. After several weeks we will conduct a sensory analysis and select the one that best supports and enhances the flavor of the Rosen grain. To be clear, these tests will never make it to the still nor result in finished whiskey, it’s simply another important step in the exciting process.
